#159 - Eat a completely vegetarian diet for 1 month - DONE!

This challenge was definitely one of those "walk a mile in somebody else's shoes" types, and over the course of my vegetarian month I learned a lot of things. I learned that I like squash, spices can be fun in moderation, and I am not a vegetarian. I was able to experience many new recipes, some that I will definitely make again including cous cous & eggplant lasagna! I also realized that eating out totally sucks as a vegetarian! Even the good restaurants have vegetarian options that make up no more than 10% of their menu... I had no idea. Overall it was definitely an eye opening experience, but in the end not a lifestyle for me :)
